| 解説 | パーカーポイント: 94点 予想される飲み頃：2020 - 2035 The latest release of the NV Demi Sec Exquise is derived from the 2012， 2011 and 2010 vintages， and this bottle was disgorged in November 2018. Bursting with aromas of candied peel， dried fruits， amontillado sherry， peach and toasted nuts， its full-bodied， layered and fleshy. Its 25 grams per liter dosage is largely imperceptible when paired with the right dish， and it by no means affects the sapid， umami-driven signatures that define Selosses wines. Every time I drink this wine， I wonder if this is the closest we can get today to how 19th-century Champagne tasted? (The Wine Advocate， Aug 31， 2019) |

ジャック・セロスはビオディナミ農法を発展させたカリスマです。セロスの畑の樹の活力やブドウの熟成は別物です。ブルゴーニュで学び、樽を使う醸造法を完成させました。一次発酵も二次発酵も野生酵母を使用します。
有機的な栽培、樽による醸造、ソレラシステム、単一畑のキュヴェ……多くのグローワーが彼の背中を追いかけ、テロワールを表現する方向に向かいました。彼ほど大きな影響を与え、若い造り手を触発したグローワーはいません。総生産量5000ケース弱のシャンパーニュは、世界中で探し求められ、プレミアム価格をつけています。
